Thanksgivingggg

Hey guys! A couple weeks ago I posted about roasting veggies. I am currently still living off of these warm & yummy guys. I told you some of my favorites are zucchini & potatoes. Have you guys tried any? Am i missing out on something????????? LET ME KNOWWW

KALEEE--HELP MEEEE

Obviously kale is everywhere right now! Awesome superfood, so good for you & super tastey. I sneak this sucker into everything I can, eat is for salads, make kale chips, everything. I've even started to have it in my dessert… I am currently hooked on Sally B.'s Cocoa Kale Munch Bars. Talk about heaven on earth! I could live off these things if you've never had them i sincerely recommend ordering some off her website http://www.sallybglutenfree.com. Or if you're lucky enough to live in West Chester I would check her out at the local artisan market--which is a whole mother posts, that place is a joy & puts a big fat smile on my face-----

Anyway, back to the KALE. So my problem is that these bars are getting to expensive for my sad budget. SO this week I am getting adventurous, stepping up to the plate & trying to make my own. I've been doing some recipe research & there are so many options, I have no idea which one to go with. I was REALLLYYY hoping someone could help a sista out and point me in the right direction….

Okay people Fall starts tomorrow, you know what that means?? -besides me getting to wear oversized sweaters, leggings, and sweet boots everyday-- IT MEANS ROASTED VEGGIES PEOPLE!

I freakin love roasted veggies, they're one of the simplest things to make & super delic. I could eat them for every single meal. & based on the amount that I bought from the market yesterday I think I'll have to.

Some of my favorite things to roast are

  • Zucchini- Any & all kinds
  • Spaghetti Squash- roast it up & use it in place of your pasta
  • Butternut Squash- nommmm nommmm nommmm
  • Potatoes- obvssss a classic
  • Carrots- OMGGGEEEE
  • Mushrooms- All kinds are welcomed
  • Asparagus- Oh babbyyy
  • Cauliflower- So yummy
All you have to do it toss in olive oil with some seasoning & garlic & put in the oven on 450. Different veggies have different cook times so keep your eyes out & mix occasionally.

Let Me See That Casarolllleeee

Happy Monday y'all!

If you're anything like me after class on Mondays I really just want to lay around & be a bum. So when it comes time for dinner I want to throw something together really quick, its a bonus if I'll have some leftovers too.

I know, some great photography.
















Check it out…

Mix together
2 large cans of green beans
1 tiny can of water chestnuts
--- diced so you don't have to do any dirty work
1 can cream of mushroom soup
--- I rock with Amy's Organic Cream of Mushroom
Toss in some flax seeds if you're into that kinda thing

Top it all of with some Onion Crispys to add a little crunch to it all.

350 for 30 minutes with tinfoil, remove tinfoil & cook for an additional 5.

You'll thank me later.

Most of them happen to be veggies but occasionally I throw in some meat stuff when I'm feeling extra wild. There will also be posts of me trying out some food that is foreign to me.
